BEANS-TO-BAR ARTISANAL CHOCOLATE AND CONFECTIONS
Welcome to Coati (CO-AH-TEE) Fine Chocolate!
Hamilton-Wentworth region's first artisanal beans-to-bar chocolate shop.

Opened October 2023 in the Hamilton Farmers Market.
​
We start with cocoa beans from locations all around the world. The Fair Trade/Direct Trade beans selected are of the highest quality and have been carefully fermented and dried in their home country to ensure the best flavour development. Once received by Coati they are sorted, roasted, cracked, winnowed and refined. The resulting chocolate is then tempered and incorporated into a variety of bonbons, dressed and single origin bars.
We use the highest quality nuts, fruits, confits, herbs, spices and essential oils in our products and never use artificial flavourings, colourants, preservatives, soy, gluten, peanuts, flour or eggs, however, our products may contain or have come into contact with nuts and/or dairy. Many of our products are made with certified organic ingredients identified in GREEN.

Enjoying Our Creations
* Enjoy our chocolate and confections at room temperature to experience the best flavour and texture.
​
* Truffles (ganache filled bonbons) should be eaten within five days of purchase. If you can't avoid purchasing within five days of enjoyment you may place your truffles in the fridge to maintain their freshness for an additional five days. Bars and most other confections can be kept up to a month. Make your purchases as close to the date of enjoyment as possible.

* All our goodies are best kept in a cool dark place. Avoid the fridge or freezer unless there is a chance of melting (+24C). If you have to resort to a fridge or freezer, keep your goodies in their packaging with as much air expelled as possible. A white haze may develop on the outside of the product but this is just a sugar bloom and won't affect the flavour or texture.
